What’s the key to better vegan cheese? Microbreweries, one startup says

In a world where dietary choices are evolving, the quest for a superior vegan cheese has taken an intriguing turn. AuX Labs, a pioneering startup, claims to have cracked the code by producing casein—a crucial protein typically found in dairy cheese—without using cows. This innovation aims to transform vegan cheese into a product that not only tastes authentic but also melts and stretches like its dairy counterpart. Ted Jin, co-founder and CEO of AuX Labs, emphasizes that achieving the right melt and stretch qualities is essential for their product. By utilizing bioreactors for casein production, AuX hopes to offer a vegan alternative that competes on price with traditional dairy cheese. The startup has identified a unique synergy with struggling microbreweries, which have faced challenges in recent years as alcohol consumption declines in the wake of the COVID pandemic. Jin notes that many microbreweries are experiencing excess capacity and could benefit from diversifying their operations. By harnessing this underutilized potential, AuX provides brewers with an additional revenue stream while gaining access to fermentation technologies without significant capital investment. To advance their cheese project, AuX has secured $4 million in funding, with contributions from investors like NYA Ventures and Nàdarra Ventures. Currently, the company collaborates closely with breweries to ensure quality, but Jin envisions a future where these breweries can independently produce the casein using custom kits designed by AuX. The implications of this innovation extend beyond just cheese. Producing dairy-free casein could dramatically reduce the environmental footprint, requiring significantly less land, water, and generating approximately 90% lower greenhouse gas emissions compared to traditional dairy farming. With the cheese market valued at around $165 billion, AuX is poised to carve out a significant niche. While Jin remains tight-lipped about specific future plans, he is committed to enhancing the food system for future generations, stating, "Maybe it sounds corny, but I just want to build a better food system for my kids."
