Experimental wine bottle tracks oxygen moving through the cork

In a groundbreaking study published in Science Advances, a team of French researchers has uncovered the vital role that cork plays in the aging process of wine. Traditionally viewed as a mere stopper, the cork actually regulates oxygen transfer, acting almost like an additional ingredient that influences the wine's characteristics. Thomas Karbowiak, a chemist at the University of Burgundy and the senior author of the research, explains, "Twenty years ago, our group focused on the oxidation and aging of wine and all its parameters. Oxygen diffusion through cork stoppers is one of these parameters." Oxygen is crucial for wine maturation; it helps to soften harsh tannins and enhances the aromatic complexity of the beverage. However, an excess of oxygen can lead to undesirable effects, causing the wine to become stale and change color, similar to how a cut apple browns when exposed to air. Studying this phenomenon has its challenges, as the combination of liquid volume and glass thickness in a standard 750 ml wine bottle complicates the ability to monitor and measure real-time oxygen movement without introducing external air. Julie Chanut, the lead author of the study, notes, "The real bottle of wine is a complex system. We wanted something simpler and easier to understand." This research sheds new light on the intricacies of wine aging and the essential role cork plays in this delicate process.
